What’s Cookin’? Eggplant Pizza Recipe

I know the name isn’t too snazzy. I should’ve named it something catchier, but it’s after 9pm so …. that’s all I got! LOL

Thankfully, the name doesn’t have to sound so yummy because the food is! Here’s a super easy dinner to throw together, and it’s a great way to squeeze in your veggies.

Slice 1-2 eggplants (depending on the size of your family) 1/4 – 1/2 inch thick.

Brush with olive oil or coconut oil and bake at 350 for about 20 minutes or until crisp.

Pull them out and top them with tomato sauce or pizza sauce, seasonings, cheese, and other desired pizza toppings. We used turkey pepperoni, although it is a concession for me. Definitely NOT a whole food.

Bake for another 10 minutes or until cheese is melted. You could also broil on low for a few minutes.
