What’s Cookin’? Pizza Casserole Recipe

Didn’t I just do a post for eggplant pizza? Oh well, who doesn’t like pizza?? If you’re on a low-fat diet, this one will help you lose weight … assuming you check out the book Trim Healthy Mama and find out how much your body desperately needs fat! BUT, your body doesn’t need carbs and fat together. So, this casserole gives you the yummy taste of pizza without spiking your blood sugar with the combination of fats and carbs (bread).

**If you haven’t read the book, you need to allow your body 2.5-3 hours to process a fuel (fat or carbohydrate) before giving it another one IF you are trying to shed extra pounds. So allow a 3 hour window before and after this meal without any significant amount of carbohydrates. I know this might sound challenging, but believe me your options are endless for what you can eat!

The process of this casserole is really simple!

Cook your ground beef (1-2 lbs depending on the servings needed) – preferably grass fed! I actually cheated to make it even faster and just mixed in my tomato sauce and seasonings with my meat.

Cook any “pizza toppings” like onions, peppers, etc. I didn’t feel like cooking anything separately so I cooked it all together. But I threw some turkey pepperoni and some olives in the food processor to make them go a little further.

Place your ground beef in a greased casserole dish.
Layer pizza sauce (again, I just use tomato sauce and add Italian seasoning) – make sure it’s sugar free!
Layer “toppings” and cheese.
Repeat all layers.

Bake at 350 for about 20 minutes until it’s all melted.

Add a side salad and enjoy!
