Black Bean Cheese And Chicken Casserole Recipe

To be honest, I had no clue what to name this recipe. I had some Tortilla shells and Mozzarella cheese that was about to go bad, so I whipped up this dish. I had made something similar before, but this was a shot in the dark and I was very pleasantly surprised with how it turned out!

Ingredients:
1-2 Tablespoons Olive Oil(I used a nonstick pan so I didn’t use much)
1/2 onion chopped really small
3 cloves of garlic, minced
2 large chicken breasts cooked and shredded(I boiled mine to cook)
1 (15-ounce) can black beans, rinsed and drained
1 can corn, drained
1 cup fat-free, less-sodium chicken broth
1 cup of Salsa
5-6 Large Tortilla shells cut into 1 inch strips
2 cups Mozzarella cheese(or whatever cheese you have)

Directions:
Preheat oven to 450.

Heat olive oil in pan and add onions. Saute for about 5 minutes. Add garlic and saute for 1 minute. Add chicken and stir for about 30 seconds to mix. Add black beans and corn. Stir for about 30 more seconds to mix well. Take off of heat.

In another pan, combine the chicken broth and salsa. Bring to a boil then reduce heat and simmer for a few minutes. Take off of heat.

Spray cooking spray in the bottom of a 13×9 pan. Place half of the Tortilla strips in the bottom. Cover with half of the chicken mixture and then about a cup of cheese. Cover with another layer of Tortilla strips and chicken mixture. Pour the broth/salsa mixture over the top and then sprinkle with remaining cheese. Bake for about 10 minute or until cheese is melted.

The whole family really enjoyed this dish and I learned that Isabella really loves black beans! 🙂 You can serve as is, or with a little sour cream and salsa over the top!
