
Total credit for this recipe goes to the Trim Healthy Mama book! For many reason, I truly appreciate this book, and I LOVE many of the recipes. This meal is full of wonderful, satisfying FAT. That’s right. FAT. It does a body good.
I should explain. Fat and carbohydrates are both important to your body. The problem is that they don’t play nicely together — the body rarely has the chance to burn off both fuel sources. But weight loss (and health!) occur rather effortlessly when you eat single fuel meals — fat OR carbohydrates. Basically, this tastes exactly like a cheeseburger without the bun; hence the name “Cheeseburger Pie”. I’ve made other recipes by this name. None of them actually tasted good. This one DOES.
Brown 2 lbs of ground beef (feel free to double for a crowd).
Add 3 tsp onion powder and 1 tsp salt (or cheat and use 1 packet onion soup mix).
Place beef mixture into a casserole dish and stir in 6 oz. grated cheese.
Layer any “cheeseburger toppings”, i.e. onions, pickles, canned or fresh diced tomatoes, jalepenos.
In another bowl, beat 2 eggs, 1/2 cup mayo, 1/2 cup heavy cream (I used whole milk), sea salt, and pepper.
Pour mixture over everything and top with another 6 oz. cheese.
Bake at 350 for 35 minutes.
Serve with mustard and ketchup, and enjoy!
