Red Velvet Brownies With Cream Cheese Icing

We always find ourselves buying cookies when visiting the mall. I noticed a Red Velvet Brownie in the window after we ordered a few weeks ago and decided it looked incredibly easy to duplicate. I didn’t try the one at the store, but knew it was absolutely delicious because it combines three of my favorite things-Brownies, Red Velvet, and Cream Cheese! This is what I came up with-next time I might only use half of the box of Red Velvet Cake and save the other half for cake pops. 🙂 I know it doesn’t look like the bottom part is done, but it is-I used a fudge-like brownie mix and added even more chocolate chips to make it gooey.

I used box Red Velvet Cake and Brownie Mix. I am a mom of two small children, so I often take the easiest approach that also happens to be incredibly yummy. Feel free to use your own Red Velvet Cake Recipe or Brownie Recipe to substitute the box mixes.

Ingredients:
-Box(or less) of Red Velvet Cake and ingredients needed to make it(or your own recipe)
-Box of Brownie Mix and ingredients needed to make it(or your own recipe)
-1 8oz block of cream cheese, softened
-1 pound powdered sugar
-1 stick butter, softened
-1/2 tablespoon milk(optional)
-1/2 teaspoon vanilla extract

Instructions:
Preheat Oven to 350 and grease a 13×9 pan(I actually used a larger lasagna pan). If you use the 13×9, you may not want to use the whole box of Red Velvet Cake mix.

Make Brownies according to directions on box and pour into pan. Make Red Velvet Cake according to directions and pour into the same pan on top of brownie mix. Pop in oven and check after about 28 minutes with a tooth pick-if it comes out clean then it is done. Mine took about 30 minutes. Let cool in pan.

To make icing, cream together butter and cream cheese with mixer. Mix in Vanilla and gradually pour in powdered sugar. If the icing is a little thicker than you’d like, add the milk. Spread over the top after brownies have cooled. If you like a LOT of icing, you may event want to double the recipe. You can see how much icing this recipe made on my brownie pictures.

This Red Velvet Brownie recipe turned out just as good as I thought it would! I made it at my mom’s house and had a ton of testers that all agreed with me.
