
Soups are my favorite quick meal in the winter, and it’s easy to eat “in season” food in soups! Just throw it all in! What could be better?
Here’s what you’ll need:
24 oz frozen broccoli OR 2 fresh heads
8 oz package of cream cheese (1/3 less fat optional)
4 cups chicken stock
1/3 cup heavy cream (whole milk will do in a pinch)
Optional diced/canned chicken to up the protein
Steam the broccoli until tender.
Blend it with a touch of water until creamy. Feel free to reserve a little for “chunkiness”.
Add it to a pot with 4 cups of chicken stock and the cream cheese.

Add some chicken if you’re inclined. I served this for dinner, so the chicken added some protein.

Season it up with salt, pepper, and even cayenne if you’re feeling feisty!
